Meal Prep Frozen Breakfast Burritos

One of my favorite things to prep for the week is breakfast burritos! I love these because you can customize them to your liking and just keep them in the freezer until you’re ready to enjoy. So let’s get started!


  • 5-7 eggs (depending on their size and how many burritos you want to make, I used 5 eggs and was able to make 8 small burritos)
  • Tortillas (I prefer the smaller ones but you can use any size)
  • 1/2 lb of sausage
  • Shredded cheese

You can also cook some bacon, potatoes, anything else you want to add into them this is just the ingredients I used this week.

First up cook the sausage (or other meat of choice) until fully cooked through and no longer pink. I usually cook mine on a medium-high heat. Remove from pan. I like to put mine on a plate with a paper towel to get drain some of the fat off.

While the sausage cooks I like to prepare the eggs. I added 5 eggs with just a splash of milk and whisked it together with a fork until combined. After the sausage was fully cooked, I turned the heat down to medium and I placed the eggs in the same pan.

Keep stirring the eggs until fully cooked. I added a little bit of pepper and salt on top as well. Once the eggs are cooked to your liking, remove them from the heat and set aside.

While the sausage and eggs cools, I like to take out the tortillas and just heat them in microwave for 5-10 seconds (I do a stack of 5 at a time) to just heat them up a little bit. You can of course heat them up in the pan if you want. I also cut parchment paper that has foil on the other side of it into small enough sizes to fit the burritos. You can use parchment, plastic wrap (I don’t like using plastic wrap since I find it’s harder to unwrap when they’re frozen), or just regular foil.

I set everything on the counter so they’re easy to grab and start assembling!

So I set out a torillla, add in a little spoonful of eggs, add a little bit of sausage and then sprinkle the cheese on top.

Now fold the sides in and start rolling.

Keep rolling until you have a nice burrito! Then wrap it in the foil and set aside and repeat until you’re done.

I write on a ziploc freeze bag the date (you can also write directly on each burrito if you customize them, like sausage, bacon, etc) and place them in the freezer.

To reheat what I do is the night before I place one frozen burrito in the fridge and take the burrito our of the wrapper and heat it up in the microwave the next morning for 15-30 seconds. You can also wrap it in a paper towel covered in water which will help keep the tortilla soft. You can also heat these up in the oven or in a pan on the stove top depending on how much of a rush you’re in.

If I forget to put one in the fridge you just have to unwrap it and heat it up in the microwave the same way until fully heated up. I love making these every few weeks and having them for breakfast or even for lunch! I usually have mine with some fruit (since it’s a small burrito).
